Vero’s Green Smoothie

Makes: 1 smoothie 

Ingredients:

Half thumb Ginger

1 generous tablespoon Peanut Butter

1 heaping cup Frozen Mango

1 overflowing cup Frozen Peaches

2 heaping handfuls Spinach

1 cup oat milk

¼ cup water

Instructions:

  1. Pour oat milk into your blender followed by mango, peaches, peanut butter, ginger, and spinach. Finish with ¼ cup water. 

  2. Blend until creamy, smooth, and consistent in color (very few flecks, if any)

  3. Pour, sip, savor. 

This is a love-it or hate-it smoothie. The mix of ginger and peanut butter makes this creamy yet zingy, nutty yet fresh. I stumbled upon this combination in a morning breakfast rush; trying to make something delicious and also get my greens for the day. When I took the first sip, I immediately ran to my neighbor’s apartment and asked “what the heck is happening, is this good or too weird?”. She loved it, I loved it, Sophie loves it, and what started as a freezer clean-out turned into our go-to smoothie.
